Lemon Drizzle Cake

I thought I share something a little but different for Beauté today and that is a recipe for one of my favourite cakes. Now that the evenings are getting lighter and the days are getting warmer it really does put me in the mood for spring and summer and in my mind what is more spring like than a lemon drizzle cake? I always seem to find myself making lemon drizzle around Easter, it must be a festive thing, so follow the instructions below for your own little taste of spring.

170g Self Raising Flour
170g Caster Sugar

1 tsp Baking Powder
3 eggs
2 lemons
110g Icing Sugar

Mix together the butter, flour, sugar, eggs, baking powder and the zest of two lemons until fully mixed and smooth. Pop into a tin and bake in the oven (set to 180 degrees celsius) for 30-45 mins. Keep check the cake as the time will depend on the size of the tine used, the best way to test if your cake is cooked is to carefully slide a knife into the centre and if it comes out clean with no cake batter on then the cake is cooked. Whilst the cake is cooking you can make the drizzle, by mixing together the icing sugar with the juice of 2 lemons. When the cake is cooked and still hot, poke it all over with a skewer then pour on the drizzle and wallah, as simple as that.
