Oreo Fridge Cake

I am all for fail proof baking, no burnt buns and soggy sponges here please. So when I came across this Oreo fridge cake I just had to give it a try and it soon became a favourite amongst friends and family, but who doesn't enjoy an Orea ey? I thought I would share the recipe with you all today because its to good to miss out on and I would really love to hear your thoughts so please leave a comment below. 

430g Oreo Cookies
170g Butter
230g Cream Cheese
340g Icing Sugar 
340g Whipping Cream 
170g Chocolate Fudge Instant Pudding Mix
535ml Whole Milk

1. Put aside 58g of Oreos for the topping, then divide and crush the remaining.
2. Melt the butter and mix into the crushed Oreos, then press into a greased baking tray.
3. Beat the cream cheese with the icing sugar on medium speed. Whisk the whipping cream until it forms a thick spread like texture and then fold in half of this into the cream cheese mixture.
4. Spread over the cookie crumb layer and leave in the fridge for 1/2 hour.
5. In the meantime, combine the milk and chocolate fudge instant pudding mix, until smooth and then pour over chilled mixture in the fridge. Leave in the fridge for a further 1 hour.
6. After 1 hour spread the remaining layer of whipped cream on top and then decorate with the left over Oreos, I like to crumble some up and leave some whole but cut in half for decoration. Then return back to the fridge ready for when it needs to be served.
